The X.Org project is a free implementation of the X Window System which runs on most free operating systems, including on the GNU system and its GNU/Linux variants.

X.Org Server is used for the windowing graphical user interface on GNU and BSD systems.

“xorg-server” refers to the X servers packages of X.
